History
The history of Ouzo of Plomari Isidoros Arvanitis begins in 1894 in Plomari, Lesvos by Isidoros Arvanitis, a persistent perfectionist from Plomari, who wanted to create the best ouzo in the world. Since then and until today, the famous Ouzo of Plomari keeps its quality and taste unchanged, since it is produced with the same secret recipe, giving emphasis on the exquisite seeds and herbs, and the same traditional distillation method.
The fine ingredients
The anise used in the recipe is considered to be the best in world and it is grown in the fields owned by the Distillery in the village Lisvori, in Lesvos, and is a certified product of organic farming.
In the fine ingredients of the recipe, the following are included: soft water from the springs of the river Sedountas that makes ouzo so special, and the best quality ingredients from all over Greece, like fennel from Evia, extracts of gum (masticha), salt from the salt-pans of Kalloni, Lesvos.
The production process
The production of the distillate process gives Ouzo of Plomari its ideal flavour. The distillation takes place in stills, which is the only way of traditional production. The distillery consists of 18 small, handmade, copper stills.
Ouzo of Plomari is 100% double distilled, with each distillation lasting nine hours, since, like it is said: “the slower the process, the better the distillate”. In this way, we achieve high quality results, ideal aromatic and taste balance and soft and refined texture as well.
Science in the service of tradition
The distillery combines the traditional distillation and production process with the latest science in bottling, packaging and storage. All these strict procedures are assured by the Quality Assurance Certificate, ISO 22000: 2005 by TUV-Austria Hellas for the application of HACCP in the production and bottling of its products
